In a town of extraordinary beauty, Lao is Barichara's most celebrated restaurant. Chef Luz Angela Montoya sources almost everything from local farms and the surrounding Santanderean countryside — the smoked goat shoulder with guanábana mojo and charred corn is a revelation. The dining room, set in a restored bahareque house with a garden of native plants, is one of the most beautiful in the country. Reserve far in advance.

Absolutely incredible experience. One of the best places I've visited in Colombia. The atmosphere, the food, everything was perfect.
